Ghyll scrambling is a lot more accessible than canyoning as all the obstacles can be missed out if you don't like the look of them. Often gorge scrambling involves scrambling up a mountain river, where as canyoning is usually done in descent.
Canyoning is a lot more 'full on' than gorge scrambling and usually involves the use of ropes to abseil down large waterfalls. The jumps on our canyoning trips are higher and more committing than those found on our gorge scrambles and the obstacles cannot be missed out easily.
